Taco Tuesday is always a popular meal!
There are a ton of ways we can make this meal so much healthier and still a favorite, too.
Choose your Taco meat wisely!
Ground Beef is a fatty meat (at least the stuff that tastes good!). Go for organic and/or Grassfed. Hint: Sam’s club has a 2 lb pack for $13 or less. Walmart also has a less expensive organic one and the butcher next to Haka (Roger’s) has a great price plus the benefit of deciding exactly how much you want.
Don’t use those Taco seasoning packets!!!
Seasoning, soup, and dressing packets all have a bunch of crap in them! MSG is a big one that you want to avoid, especially if you or someone in your family struggle with ADD or ADHD, sleep issues, kidney stones, high blood pressure, or digestive issues. Instead, see the recipe below to flavor the meat yourself!
It’s ok to be sneaky, at least a little bit.
I’m not a huge fan of hiding veggies and stuff in food but I know this is often a must if you are making changes in a family with kids. Taco meat lends itself to pureed pumpkin. I know it sounds crazy, but the pumpkin gives it that classic orange-ish color and makes it a bit saucy.
Make all the other Taco stuff matter, too!
Sure, you are going to eat sour cream (it wouldn’t be yummy without it), but where CAN you upgrade? Consider putting the meat and toppings on a baked potato or Sweet potato instead of a Taco shell. Maybe try organic Corn Tortillas and make it more like nachos. If you do go classic tortillas, just check the ingredients and get the best you can find! For Cheese, go full fat and at least organic.
Make your own salsa and guacamole, for goodness sakes!!
This is a great meal to make in a big batch and serve again a few days later…

Taco Meat, Seasoned
Mix all remaining ingredients, then add to the meat. Return to a simmer until sauce blended, then serve.
