Veggie Tots

We have our produce box delivered every Thursday to the gym. It’s like Christmas to open it up and see all the beautiful fruits and veggies and herbs! We were looking to mix it up a bit and the boys are definitely at an age where hand-held foods are just so realistic. A client shared that her family loves “Green Balls” and I just ran with that…. and gave them a name I can say without snickering….

Ingredients:

1 medium sweet potato, peeled (I think organic makes a difference in quality and taste)

Lots (maybe 4 cups) of kale or swiss chard or a combo

1/4-1/2 C fresh herb of choice… I used parsley this go round

3 cloves fresh garlic

2 eggs

1/8 tsp salt

1/4 C plus a bit of Gluten free Panko crumbs (or crushed rice krispies works)

Avocado oil

I do the whole thing in my Ninja but any food processor or strong blender should work. I chunk the sweet potato and toss it in with 1/2 the kale/swiss chard, garlic and eggs. Blend for about 30 seconds until even in consistency. Add the rest of the greens and the herbs. Blend again. Add the salt and panko and blend. It will be moist but shouldn’t be runny. If so, add more greens and a bit more panko.

In a saute pan, cover the bottom with avocado oil and heat to medium high.  Use your hands to grab out small handfuls of the mixture and form sort of a ball. You can roll this in panko again if you like. Drop in the oil and let set until the edges are crispy before you flip. Don’t flip too early!!

Remove from oil and place on a paper towel to cool.

Variations:

** Use Basil as the herb and add 1/4 C parmesan

** Use cilantro as the herb and add some taco type seasonings like paprika, cumin, and a bit of cayenne.

 

Dipping Sauces:

** I like AWESOME SAUCE on everything.

** Pesto and greek yogurt could be yummy

** Greek Yogurt with fresh garlic and sriracha would be good too.
