Betsy's "Oatmeal"-- grain free!
This is PERFECT for before a long run or even after if you beef it up with a side of eggs or some quality whey protein. Ingredients: 2 eggs 1/2 cup almond milk or coconut milk 2 ripe bananas (I used 1) 2 tbs of almond butter 1/4 cups almonds crushed 1/4 cups walnuts crushed (I used unsweetened coconut) 4 tbs flaxseed meal (I used almond meal) salt cinnamon I also like to add raisins :-)
Directions: In a small pan over low heat, whisk together the eggs and milk. Mash the bananas and almond butter together. Mix in with eggs and milk the mashed bananas and almond butter, almonds, walnuts, flaxseed meal, salt and cinnamon. Stir continuously until desired consistency.
