Cheez-its, yes, CHEEZ-ITS!!

Cheez-It-Crackers
You know you love them. They bring back every wonderful childhood memory imaginable. What if, yes, what if, you could make them at home (then they aren't "out of a package"), and they could be kind of sort of good for you, and they could even be so yummy that Mark gives a nod of approval?? Done!

Cheez-its
Ingredients: 1 C white or brown rice flour (I used brown cause I had it) 1 C Tapioca Starch 1 tsp sea salt 1/2 tsp baking soda 4 Tbsp Organic butter (use the good stuff!!), softened 8 TBSP mashed butternut squash (just use your leftovers from dinner) 1 1/3 C cheddar Cheese (if you're making them for adults, use the Kerrygold cheese or some other really high quality cheese) 1-2 TBSP water 4 TBSP grated Parmesan Cheese

Heat oven to 350*
In a bowl, mix the flours, salt, baking soda, butter, squash, and cheddar cheese. Add half the water and mix. Knead it with your hands and see if it will form a ball. If not, add a bit more water. Add the Parmesan and fully incorporate by kneading the dough. Place between sheets of parchment paper and roll dough to desired thickness. I did half the dough at a time and rolled it pretty darn thin. Remove top parchment and slice into squares. Place on cookie sheet and bake about 20 min. I set the timer at 18 min and then watched them like a hawk. It's a fine line between crispy and burnt :-P
