Haka House Meal Prep- Week 2: Mon-Thur
Here we goooooooo! It's time to take everything you did this weekend (Part 1 is HERE) and put it into action. You are all prepped to put healthy and delicious meals onto the table for your family this week.
Today could NOT be simpler-- Rosemary and Lemon Soup!! You have two options: Put it into the crock pot before the day starts (it'll need 6-8 hours) or put it into a pot and cook 3-4 hours. You'll want to place the rest of your chicken thighs and sliced your veggies (about 1/4 of the onion and all of the squash and zucchini) into the pot or crockpot, as well as the sliced carrots you purchased and the herbs from the recipe (2 heaping teaspoons lemon pepper, 1 tsp. roasted garlic powder, ½ tsp. sea salt, ½ tsp. dried basil, ½ tsp. dried oregano, ½ tsp. dried parsley) into your pot. If you have an extra few minutes, sear the chicken on each side first but it's totally not necessary. Squeeze in the fresh lemon juice (1/4 C) and add the chicken broth. Set your crock pot to low or bring the soup to a low boil on the stove, reduce heat, and allow to simmer. This soup definitely can stand alone, or it would go great with a baked potato or sweet potato. I also like to squeeze in extra lemon juice, especially if I don't have lemon pepper.
Today is planned leftovers with your brisket. We are going to turn them into some yummy Brisket Tacos. Who doesn't like Taco Tuesday, right? The brisket can be heated in a pan in the oven with a little of the juice. Meanwhile, empty the bag of broccoli slaw into a bowl. Squeeze the juice from 2 limes on top, add 1 tsp honey, and drizzle about 2 tsp of sriracha onto it. As an alternative, you can also do 1/8-1/4 tsp of chipotle powder instead of the sriracha, but this is SPICY!! Place about 1/3 cup of your homemade mayo into the bowl and stir everything together. Be sure to salt the slaw with a good sea salt to bring all the flavors together. Also, scoop out avocado (2) into a bowl, add the juice from another lime, and about 1/4 C fresh chopped cilantro. Add 1/4 tsp of salt and combine with a fork or stick blender for a simple, fresh guacamole. To serve, warm some corn tortillas and place some brisket on it. Top with the broccoli slaw and some guacamole. Super Mark appreciates some simple Jasmine rice with this dish but I eat the tacos without.If you do make rice, make a bunch so you have it for tomorrows stir fry.
This quick stir fry is delicious-- Double Duty Stir Fry! You'll want to start a pot of Jasmine rice first (if you didn't make it yesterday). Don't start the stir fry until the rice is essentially done. Heat about 1 Tbsp of avocado oil in a saute pan. Add 2 cloves of garlic(minced), 1/2 of what's left of your onions and also your sliced peppers. Saute over high heat for 1-2 min. Meanwhile, chop up your poached chicken breasts. Add those to the veggies to heat through. Combine the ingredients for the sauce in a bowl. Double this so that you can freeze half of it in a small freezer bag and add it to your freezer meal. Add the other half to the pan and turn off the heat. It will thicken quickly and be ready to serve!
Creamy Herbed Pork Chops tonight! You could do the first part (saute the veggies, sear the meat) the night before and throw it in the crockpot this morning or do it all this morning. Also, if you don't do prok, use this same recipe with chicken :-)
In a saute pan or cast iron skillet (my preference), heat oil or butter. Add chopped onion, garlic, mushrooms, thyme, rosemary, and salt. Saute until the onion is mostly cooked. Remove from pan and reheat pan. Season meat on all sides with salt and pepper. Sear on all sides. At this point you can put the meat and the veggies in a crockpot, cover with broth, and set to low for 6-8 hours OR return everything to your cast iron skillet, cover with broth, put on the lid, and put in the oven for 4 hrs at 280*.
Just before serving, place the tapioca starch into a small bowl. Add several spoonfuls of juice from the dish or just some chicken broth. Stir well and add it back to the main dish. Add your Heavy cream and allow to reheat for a few moments and thicken.
This goes great with some steamed broccoli or throw in some frozen peas just before it's finished cooking.
